Exquisite Junkyard Chili: Food to Fuel the MREA in All of Us

3 tbsp coconut or olive oil
20 oz. tempeh or hard tofu (or ground turkey) 
Diced medium white onion
3 cloves of chopped garlic
1-2 jars of tomato salsa
2-3 cups of cooked black beans
Raw spinach leaves
Chopped raw broccoli
Tomato sauce
Chopped Serrano or jalapeno peppers
Any other veggies you desire to add
Sea salt, black pepper
Cayenne pepper
 
Directions:
1. Sauté the oil and onions at medium heat until slightly brown and soft, add tempeh or turkey and cook until slightly brown.
2. Add chopped raw garlic, tomato sauce, tomato salsa, cooked black beans, raw spinach leaves, chopped broccoli, etc.
3. Cook on low heat for 15-20 minutes, stirring occasionally and adding sea salt, fresh pepper, a pinch of brown sugar, hot sauce and a touch of cayenne if you like.
